This Easter Brownie Recipe is an easy bake and perfect for all the family to enjoy!
The children can get involved too!
Everything goes into one bowl to make it super easy and then let your children decorate with the Easter treats. Hopefully they won’t eat them all before they get onto the Easter Brownies!
Ingredients:
- 230g packet mini Easter eggs

150g plain flour

315g caster sugar

100g brown sugar

80g cocoa powder

180g unsalted butter, melted, cooled slightly

3 eggs, lightly whisked

1 tsp vanilla extract

Assorted chocolate eggs and Easter treats to decorate
Method
Step 1
Preheat the oven to 160C/140C fan oven. Grease a 20cm square cake tin and line with greaseproof baking paper. Allow the baking paper to slightly overhang the sides. Coarsely chop 100g mini Easter eggs.
Step 2
Combine the flour, caster sugar, brown sugar, cocoa, butter, egg and vanilla in a large bowl until well combined. Add the chopped mini eggs and fold through. Spoon the mixture into the prepared tin. Bake for 55 minutes. Insert a skewer and if it comes out clean it’s ready! Set aside in the tin to cool completely.
Step 3
Melt 55g of the mini chocolate eggs in a small heatproof bowl over a saucepan of simmering water (make sure the bowl doesn’t touch the water). Drizzle the melted chocolate over the brownie. Top with the remaining mini eggs and assorted Easter treats. Set aside until set then cut into pieces to serve.
