Easy Cupcake Recipe

Fun for the weekend! This easy cupcake recipe is tried and tested with us here at Parenting Expert. You could get creative and try your hand at piping some delicious buttercream designs on the top! Your little ones will love baking these, having fun decorating them and most of all, eating them!

Ingredients
  • 125g self raising flour
  • 125g caster sugar
  • 1/4 tsp bicarbonate of soda
  • 125g unsalted butter, at room temperature – leave out overnight if possible
  • 2 large organic eggs
  • 1 teaspoon vanilla extract
  • 1.5 tbs milk
Instructions

1. Preheat your oven to 170°C and line your bun tin with cupcake cases.

2. In a medium-sized bowl sieve your flower, caster sugar and bicarbonate of soda.

3. Add the butter, eggs and vanilla extract.

4. Mix on a low speed for about 30 seconds then turn the speed up for 1 minute.

5. Turn the speed back down and add the milk, mix for another 30 seconds,

6. Spoon the batter into the cupcake cases, filling each one about two-thirds full.

7. Bake in the preheated oven for 18-20 minutes or until a toothpick or skewer inserted into the centre of a cupcake comes out clean.

8. Remove the cupcakes from the oven and let them cool in the bun tin for a few minutes before transferring them to a wire rack to cool completely.

Decorating

You can decorate your cupcakes any way you like but we like to use buttercream.

Buttercream Ingredients

  • 150g unsalted butter, at room temperature
  • 340g icing sugar, sieved
  • 3 to 4 tbs milk or cream
  • 1 teaspoon vanilla extract
Instructions

1. In a large bowl, beat the butter with a hand mixer or a stand mixer until creamy.

2. Gradually add the sieved icing sugar, one spoonful at a time, mixing well after each addition.

3. Add the vanilla extract and 1 tablespoon of milk/cream. Beat until smooth and creamy. If the buttercream is too thick, add more milk/cream a little at a time until you reach the desired consistency.

4. Once the cupcakes are completely cooled, decorate them using a piping bag or simply spread the frosting on top with a butter knife.

5. You can now top the cupcakes with sprinkles, chocolate chips, or any other toppings of your choice!
