Ingredients:
  • 2 large red bell peppers
  • 1 can (15 ounces) chickpeas (garbanzo beans), rinsed and drained
  • 1/4 cup tahini
  • 2 cloves garlic, minced
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, for garnish (optional)
Instructions:

1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Cut the red bell peppers in half and remove the seeds and stems. Place the pepper halves on the prepared baking sheet, cut side down. Roast them in the preheated oven for about 25-30 minutes or until the skins are charred and wrinkled.

3. Remove the roasted peppers from the oven and transfer them to a bowl. Cover the bowl with plastic wrap and let the peppers cool for about 15 minutes. This will make it easier to remove the skins.

4. Once the peppers have cooled, peel off the charred skins. They should come off easily. Discard the skins and roughly chop the roasted peppers.

5. In a food processor or blender, combine the chopped roasted peppers, chickpeas, tahini, minced garlic, lemon juice, olive oil, cumin, paprika, salt, and pepper. Process the mixture until smooth and creamy. If the hummus is too thick, you can add a tablespoon or two of water to thin it out.

6. Taste the hummus and adjust the seasoning if needed. Add more lemon juice, salt, or spices according to your preference.

7. Transfer the roasted red pepper hummus to a serving bowl. If desired, drizzle a little olive oil on top and garnish with fresh parsley.

8. Serve the hummus with pita bread, crackers, vegetable sticks, or use it as a spread in sandwiches and wraps.
